    This warm winter salad recipe combines the earthy flavors of roasted Brussels sprouts and sweet potatoes with the freshness of kale, spinach, and grilled chicken. Topped with a tangy lemon dressing and sun-dried tomatoes, this salad is a delicious and nutritious meal option to make any chilly winter day a little more cozy! An old favorite restaurant of mine used to serve a version of this until they went out of business and I missed it so much I had to recreate it! Warm Winter Salad Ingredients: - 1 cup Brussels sprouts, halved - 1 cup sweet potatoes, diced - 2 cups kale, chopped - 2 cups spinach leaves - 1 Avocado, cubed - 1 grilled chicken breast, sliced - ¼ cup sun-dried tomatoes, chopped For the Lemon Dressing: - 2 tablespoons fresh lemon juice - 2 tablespoons olive oil - 1 clove garlic, minced - Salt and pepper to taste Instructions: 1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. 2. In a bowl, toss the halved Brussels sprouts and diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet. 3. Roast the Brussels sprouts and sweet potatoes in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized. Remove from the oven and set aside to cool slightly. 4. While the brussels and potatoes are baking slice the chicken into long thin strips and saute with a bit of olive oil, garlic, salt and pepper. 6.  In a large salad bowl, combine the chopped kale and spinach leaves. 7. Add the roasted Brussels sprouts, sweet potatoes, and sliced grilled chicken to the salad bowl. 8. In a small bowl, whisk together the fresh lemon juice, olive oil, minced garlic, salt, and pepper to make the lemon dressing. 9. Drizzle the lemon dressing over the salad and toss gently to coat all the ingredients. 10. Sprinkle the chopped sun-dried tomatoes and cubed avocado over the salad for an extra burst of flavor. 11.   • Healthier Paleo Air Fryer Sesame Chicken Recipe

    Create a mouthwatering healthier twist on a beloved classic with an adaptation of a recipe for air fryer sesame chicken. This healthier version of the popular takeout favorite will tantalize your taste buds while keeping your well-being in mind. Get ready to elevate your cooking game and enjoy a guilt-free indulgence with this delectable dish! Sesame Sauce: 2/3 cup water warmed slightly 5 dates pitted 1/4 cup coconut aminos 3 Tbsp rice vinegar 2 tsp arrowroot flour  or tapioca 1 Tbsp sesame oil 1/2 tsp garlic powder 1/4-1/2 tsp red pepper flakes  adjust to taste Chicken: 2 lb boneless skinless chicken thighs cut into 1" pieces 1 tsp sesame oil 1/2 tsp garli c powder 1 cup tapioca flour or arrowroot 1 1/4 tsp salt 1/4 tsp black pepper 2 eggs  whisked Avocado oil for coating in air fryer Garnish: 2 Tbsps sesame seeds for garnish Thinly sliced scallions for garnish Instructions Sauce: In a high speed blender, blend together all the sauce ingredients except for the red pepper flakes, until a smooth mixture forms, scraping down the sides to incorporate all the dates if needed. Transfer the sauce to a small saucepan over medium heat. Whisk and heat for 2-3 minutes to a boil, then lower the heat to med-low to simmer. Add the red pepper flakes, then simmer for another 3-4 minutes until the mixture thickens and reduces a bit (it should resemble a thick caramel). Chicken: Place the arrowroot or tapioca in a shallow bowl along with the salt and pepper. Whisk the eggs in a separate shallow bowl. Drizzle the chicken with the sesame oil and sprinkle with the garlic powder. Coat chicken pieces in whisked egg lightly, then toss in arrowroot starch, shaking off excess, and place in s bowl Place a single layer of coated chicken in airfryer and lightly coat with avocado oil. Cook for 15 minutes at 390 degrees or until cooked through. Repeat the process for the remaining chicken, Gently reheat the sesame sauce and toss it with the chicken. To serve, sprinkle all over with sesame seeds and green onion and and serve over sautéed cauliflower rice or your favorite veggies. Enjoy!
