Warm Winter Salad Recipe: Roasted Brussels Sprouts and Sweet Potatoes with Grilled Chicken



This hot salad recipe combines the earthy flavors of roasted Brussels sprouts and sweet potatoes with the freshness of kale, spinach, and grilled chicken. Topped with a tangy lemon dressing and sun-dried tomatoes, this salad is a delicious and nutritious meal option to make any chilly winter day a little more cozy!


An old favorite restaurant of mine used to serve a version of this until they went out of business and I missed it so much I had to recreate it!


Ingredients:


- 1 cup Brussels sprouts, halved

- 1 cup sweet potatoes, diced

- 2 cups kale, chopped

- 2 cups spinach leaves - 1 Avocado, cubed

- 1 grilled chicken breast, sliced

- ¼ cup sun-dried tomatoes, chopped


For the Lemon Dressing:


- 2 tablespoons fresh lemon juice

- 2 tablespoons olive oil

- 1 clove garlic, minced

- Salt and pepper to taste


Instructions:


1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.


2. In a bowl, toss the halved Brussels sprouts and diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet.


3. Roast the Brussels sprouts and sweet potatoes in the preheated oven for 20-25 minutes or until they are tender and slightly caramelized. Remove from the oven and set aside to cool slightly.


4. While the brussels and potatoes are baking slice the chicken into long thin strips and saute with a bit of olive oil, garlic, salt and pepper.


6. In a large salad bowl, combine the chopped kale and spinach leaves.


7. Add the roasted Brussels sprouts, sweet potatoes, and sliced grilled chicken to the salad bowl.


8. In a small bowl, whisk together the fresh lemon juice, olive oil, minced garlic, salt, and pepper to make the lemon dressing.


9. Drizzle the lemon dressing over the salad and toss gently to coat all the ingredients.


10. Sprinkle the chopped sun-dried tomatoes and cubed avocado over the salad for an extra burst of flavor.


11. Serve the hot salad immediately and enjoy!


Note: Feel free to customize this hot salad recipe by adding other vegetables or toppings of your choice, such as roasted almonds or crumbled feta cheese.


Tip for Leftovers: I've also made leftovers into a nutritious breakfast by adding eggs!)
