Chicken & Veggie Stuffed Avocados (Serves 4)
Ingredients:
- 2 ripe avocados, halved and pitted
- 2 cups cooked chicken breast, shredded (you can use rotisserie chicken for convenience)
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup carrots, shredded
- 1/4 cup zucchini, finely chopped
- 1/4 cup corn kernels (fresh or frozen)
- 1/4 cup cherry tomatoes, diced
- 1/4 cup cucumber, finely diced
- 2 tbsp plain Greek yogurt (or mayonnaise for a creamier option)
- 1 tbsp fresh lime juice
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1 tbsp fresh cilantro, chopped (optional)
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional for topping)
Instructions:
1. Prepare the Avocados:
Scoop out some of the avocado flesh, leaving a small border to make room for the stuffing. Set aside the scooped avocado in a bowl and mash it lightly.
2. Make the Chicken Filling:
In a large bowl, combine the shredded chicken, chopped bell pepper, carrots, zucchini, corn, tomatoes, and cucumber.
Add in the mashed avocado, Greek yogurt (or mayo), lime juice, garlic powder, and cumin. Mix well.
Stir in chopped cilantro if using, and season with salt and pepper to taste.
3. Stuff the Avocados:
- Spoon the chicken and veggie mixture generously into the avocado halves.
